Ingredients

  • 10 oz cherry tomatoes
  • 2 tablespoons olive oil (for tomatoes)
  • 3 cloves garlic, minced (for tomatoes)
  • Salt and pepper to taste (for tomatoes)
  • 1.5 lb chicken breast, thinly sliced
  • 1/4 teaspoon salt
  • 2 teaspoons smoked paprika
  • 1 teaspoon Italian seasoning
  • 2 tablespoons olive oil (for chicken)
  • 1/2 lemon, thinly sliced
  • 4 cloves garlic, minced (for chicken)
  • 4 tablespoons butter
  • 8 oz spaghetti
  • 8 oz Burrata cheese
  • 1/2 cup fresh basil, chopped
  • 1/3 cup pine nuts, lightly toasted

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Prepare the tomatoes by tossing them with olive oil, minced garlic, salt, and pepper. Spread them on a baking sheet and roast for about 20 minutes.
  3. Cook the chicken in a skillet with olive oil, seasoning it with salt, smoked paprika, and Italian seasoning until golden and fully cooked.
  4. Prepare the garlic butter by adding lemon slices and minced garlic in the same skillet; then melt in the butter.
  5. Cook the spaghetti according to package instructions until al dente, then drain.
  6. Combine the cooked spaghetti with the garlic butter and lemon slices.
  7. Assemble the plates with spaghetti, sliced chicken, roasted tomatoes, Burrata cheese, basil, and pine nuts.

Notes
