- 1.5 lb chicken breast, thinly sliced
- 1/4 teaspoon salt
- 2 teaspoons smoked paprika
- 1 teaspoon Italian seasoning
- 2 tablespoons olive oil (for chicken)
- 1/2 lemon, thinly sliced
- 4 cloves garlic, minced (for chicken)
- 4 tablespoons butter
- 8 oz spaghetti
- 8 oz Burrata cheese
- 1/2 cup fresh basil, chopped
- 1/3 cup pine nuts, lightly toasted
Instructions
- Preheat your oven to 400°F (200°C).
- Prepare the tomatoes by tossing them with olive oil, minced garlic, salt, and pepper. Spread them on a baking sheet and roast for about 20 minutes.
- Cook the chicken in a skillet with olive oil, seasoning it with salt, smoked paprika, and Italian seasoning until golden and fully cooked.
- Prepare the garlic butter by adding lemon slices and minced garlic in the same skillet; then melt in the butter.
- Cook the spaghetti according to package instructions until al dente, then drain.
- Combine the cooked spaghetti with the garlic butter and lemon slices.
- Assemble the plates with spaghetti, sliced chicken, roasted tomatoes, Burrata cheese, basil, and pine nuts.
Notes
