Description

A vibrant dish featuring slow-roasted cherry tomatoes and creamy, whipped feta, perfect as an appetizer or spread.


Ingredients

  • 2 cups cherry tomatoes
  • 1/4 cup olive oil
  • 2 dried chili peppers
  • 1 head of garlic
  • 1 teaspoon salt
  • Several sprigs of thyme (or chives)
  • 1 block of feta cheese
  • 1/2 cup Greek yogurt
  • 1 tablespoon honey
  • Fresh dill, parsley, and chives for garnish

Instructions

  1. Preheat the oven to 300 degrees Fahrenheit.
  2. Arrange the cherry tomatoes in a deep, oven-safe dish to cover the bottom.
  3. Add the garlic, cut crosswise, and toss in the herbs and dried chili peppers.
  4. Season with salt to enhance the flavors.
  5. Pour olive oil generously over the tomatoes until mostly covered.
  6. Bake for about 90 minutes.
  7. Allow the confit to cool before using.
  8. Blend feta cheese, Greek yogurt, honey, dill, parsley, and chives until fluffy.
  9. Refrigerate the whipped feta until chilled.
  10. Spread the whipped feta on a plate, top with prepared tomato confit, and enjoy.

Notes

For extra flavor, add lemon zest to the whipped feta. Consider using a variety of cherry tomatoes for color.
