- 2 cups cherry tomatoes
- 1/4 cup olive oil
- 2 dried chili peppers
- 1 head of garlic
- 1 teaspoon salt
- Several sprigs of thyme (or chives)
- 1 block of feta cheese
- 1/2 cup Greek yogurt
- 1 tablespoon honey
- Fresh dill, parsley, and chives for garnish
Instructions
- Preheat the oven to 300 degrees Fahrenheit.
- Arrange the cherry tomatoes in a deep, oven-safe dish to cover the bottom.
- Add the garlic, cut crosswise, and toss in the herbs and dried chili peppers.
- Season with salt to enhance the flavors.
- Pour olive oil generously over the tomatoes until mostly covered.
- Bake for about 90 minutes.
- Allow the confit to cool before using.
- Blend feta cheese, Greek yogurt, honey, dill, parsley, and chives until fluffy.
- Refrigerate the whipped feta until chilled.
- Spread the whipped feta on a plate, top with prepared tomato confit, and enjoy.
Notes
For extra flavor, add lemon zest to the whipped feta. Consider using a variety of cherry tomatoes for color.
