Description

Ingredients

  • ½ cup granulated sugar (for the filling)
  • 1 tbsp lemon juice (optional)
  • 1 tbsp cornstarch (optional)
  • 2 cups heavy cream
  • ½ cup powdered sugar
  • 1 tsp vanilla extract (for whipped cream)
  • Shaved chocolate or chocolate chips (for garnish)
  • Extra cherries (for garnish)

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. Whisk together the flour, baking powder, baking soda, salt, cocoa powder, and granulated sugar in a large bowl.
  3. Add the eggs, buttermilk, vegetable oil, and vanilla extract to the dry ingredients. Mix until smooth, then gradually stir in the boiling water.
  4. Pour the batter evenly into the prepared cake pans and bake for 30-35 minutes.
  5. Combine the cherries, granulated sugar, and lemon juice in a saucepan for the cherry filling and cook over medium heat for 5-7 minutes.
  6. Beat the heavy cream, powdered sugar, and vanilla extract in a chilled bowl until soft peaks form for the whipped cream.
  7. Assemble the cake by placing one layer on a platter, spreading cherry filling and whipped cream, then topping with the second layer and frosting it with remaining cream.
  8. Refrigerate the assembled cake for at least 2 hours before serving.

Notes

For a richer flavor, consider using dark cocoa powder instead of regular cocoa powder.
