- 1 tbsp cornstarch (optional)
- 2 cups heavy cream
- ½ cup powdered sugar
- 1 tsp vanilla extract (for whipped cream)
- Shaved chocolate or chocolate chips (for garnish)
- Extra cherries (for garnish)
Instructions
- Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
- Whisk together the flour, baking powder, baking soda, salt, cocoa powder, and granulated sugar in a large bowl.
- Add the eggs, buttermilk, vegetable oil, and vanilla extract to the dry ingredients. Mix until smooth, then gradually stir in the boiling water.
- Pour the batter evenly into the prepared cake pans and bake for 30-35 minutes.
- Combine the cherries, granulated sugar, and lemon juice in a saucepan for the cherry filling and cook over medium heat for 5-7 minutes.
- Beat the heavy cream, powdered sugar, and vanilla extract in a chilled bowl until soft peaks form for the whipped cream.
- Assemble the cake by placing one layer on a platter, spreading cherry filling and whipped cream, then topping with the second layer and frosting it with remaining cream.
- Refrigerate the assembled cake for at least 2 hours before serving.
Notes
For a richer flavor, consider using dark cocoa powder instead of regular cocoa powder.
