A comforting casserole featuring the sweetness of Vidalia onions and the sharpness of cheddar cheese, topped with crispy Ritz cracker crumbs.

- 4 large Vidalia onions, sliced
- 2 tablespoons unsalted butter
- 3 eggs
- 1 (5 oz.) can evaporated milk
- 1 cup crumbled Ritz crackers
- 1 1/2 cups (6 oz.) shredded cheddar cheese
- 1/2 teaspoon salt
- 1/8 teaspoon pepper
- 1 cup crumbled Ritz crackers (for topping)
- 3 tablespoons unsalted butter, melted (for topping)
Instructions
- Preheat the oven to 375°F (190°C).
- Prepare the onions by slicing off the root and stem ends, cutting them in half vertically, and chopping into slivers.
- Blanch the chopped onions in boiling water for about 8 minutes, then drain.
- Toss the warm onions with 2 tablespoons of unsalted butter.
- Whisk together the eggs and evaporated milk in a large bowl, then mix in the onions, crumbled Ritz crackers, shredded cheddar cheese, salt, and pepper.
- Transfer the mixture to a greased 9×13-inch baking dish.
- Prepare the crumb topping by mixing the additional Ritz crackers with the melted butter and sprinkling it over the casserole.
- Bake in the oven for about 45 minutes until golden brown and set.
Notes
This casserole can be prepared in advance and refrigerated before baking. Leftovers are great in omelets or on baked potatoes.
