- 1 small yellow onion, diced
- 3 cloves garlic, minced
- 1 pound lean ground beef
- 1 teaspoon Italian seasoning
- 1/2 teaspoon sweet paprika
- Salt and pepper, to taste
- 6 ounces fresh baby spinach
- 10 ounces frozen cauliflower rice, cooked
- 1 cup sour cream
- 1 tablespoon butter, at room temperature
- 1/2 teaspoon dried basil
- 2 to 3 tablespoons milk, if needed
- 8 ounces shredded Italian blend cheese
Instructions
- Preheat your oven to 375°F (190°C).
- Heat the olive oil in a large skillet over medium-high heat and add the onions. Cook for about 2 minutes until translucent.
- Stir in the minced garlic and cook for about 20 seconds.
- Add the ground beef to the skillet with Italian seasoning, paprika, salt, and pepper. Cook until browned.
- Gradually add the spinach in batches, cooking until wilted. Remove from heat and drain excess liquid.
- Combine cauliflower rice, sour cream, butter, and dried basil in a baking dish.
- Incorporate the beef and spinach mixture into the creamy base and stir well.
- Top with shredded cheese.
- Bake for 22 to 25 minutes until bubbly and cheese is golden.
- Let sit for 7 to 10 minutes before serving.
Notes
Use fresh spinach for better flavor and nutrients. Consider adding mozzarella for extra cheesiness.
