Ingredients

  • 1 small yellow onion, diced
  • 3 cloves garlic, minced
  • 1 pound lean ground beef
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon sweet paprika
  • Salt and pepper, to taste
  • 6 ounces fresh baby spinach
  • 10 ounces frozen cauliflower rice, cooked
  • 1 cup sour cream
  • 1 tablespoon butter, at room temperature
  • 1/2 teaspoon dried basil
  • 2 to 3 tablespoons milk, if needed
  • 8 ounces shredded Italian blend cheese

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Heat the olive oil in a large skillet over medium-high heat and add the onions. Cook for about 2 minutes until translucent.
  3. Stir in the minced garlic and cook for about 20 seconds.
  4. Add the ground beef to the skillet with Italian seasoning, paprika, salt, and pepper. Cook until browned.
  5. Gradually add the spinach in batches, cooking until wilted. Remove from heat and drain excess liquid.
  6. Combine cauliflower rice, sour cream, butter, and dried basil in a baking dish.
  7. Incorporate the beef and spinach mixture into the creamy base and stir well.
  8. Top with shredded cheese.
  9. Bake for 22 to 25 minutes until bubbly and cheese is golden.
  10. Let sit for 7 to 10 minutes before serving.

Use fresh spinach for better flavor and nutrients. Consider adding mozzarella for extra cheesiness.
