Ingredients

- 2 cups mashed potatoes
- 1 cup shredded cheddar cheese
- 1/4 cup grated parmesan cheese
- 1/4 cup sour cream or cream cheese (optional)
- 1/4 cup chopped green onions or chives
- 1 egg
- Salt & pepper to taste
- 1/4 cup breadcrumbs (for coating)
- 2 tbsp melted butter
Instructions
- Preheat the oven to 375°F (190°C).
- Line a baking sheet with parchment paper.
- Combine the mashed potatoes, cheddar cheese, parmesan cheese, and sour cream (or cream cheese) in a large bowl.
- Add the chopped green onions (or chives) and the egg. Stir until well combined.
- Season with salt and pepper to taste.
- Shape the mixture into small balls or puffs, about 1-2 tablespoons each.
- Place them on the prepared baking sheet.
- Roll the puffs in breadcrumbs to coat them lightly.
- Drizzle the melted butter over the top of each puff.
- Bake for 20-25 minutes, or until golden brown and crispy.
- Serve warm and enjoy!
Notes
For added flavor, mix in spices like garlic powder or paprika. You can refrigerate the shaped puffs for up to a day before baking.
