Description

Delightful, crispy bites of cheesy mashed potatoes, perfect as a side dish or appetizer.


Ingredients

  • 2 cups mashed potatoes
  • 1 cup shredded cheddar cheese
  • 1/4 cup grated parmesan cheese
  • 1/4 cup sour cream or cream cheese (optional)
  • 1/4 cup chopped green onions or chives
  • 1 egg
  • Salt & pepper to taste
  • 1/4 cup breadcrumbs (for coating)
  • 2 tbsp melted butter

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Line a baking sheet with parchment paper.
  3. Combine the mashed potatoes, cheddar cheese, parmesan cheese, and sour cream (or cream cheese) in a large bowl.
  4. Add the chopped green onions (or chives) and the egg. Stir until well combined.
  5. Season with salt and pepper to taste.
  6. Shape the mixture into small balls or puffs, about 1-2 tablespoons each.
  7. Place them on the prepared baking sheet.
  8. Roll the puffs in breadcrumbs to coat them lightly.
  9. Drizzle the melted butter over the top of each puff.
  10. Bake for 20-25 minutes, or until golden brown and crispy.
  11. Serve warm and enjoy!

Notes

For added flavor, mix in spices like garlic powder or paprika. You can refrigerate the shaped puffs for up to a day before baking.
