1 pound ground beef
1 medium onion, chopped
1 green bell pepper, chopped
2 cloves garlic, minced
1 (14.5 ounce) can diced tomatoes, undrained
1 (10.75 ounce) can condensed cream of mushroom soup
1 cup cooked rice (long-grain or converted rice work best)
1 cup shredded cheddar cheese, divided (plus extra for topping, if desired)
1/2 cup milk
1 teaspoon salt
1/2 teaspoon black pepper
Optional: 1/4 teaspoon red pepper flakes (for a little kick!)
Instructions
Brown the ground beef in a large skillet over medium-high heat. Drain off any excess grease.
Add the chopped onion and green bell pepper to the skillet with the ground beef. Cook until the vegetables are softened, about 5-7 minutes. Add the minced garlic and cook for another minute until fragrant.
Stir in the diced tomatoes (undrained), cream of mushroom soup, cooked rice, 1 cup of shredded cheddar cheese, milk, salt, and pepper. Mix well to ensure everything is evenly combined.
Pour the mixture into a greased 9×13 inch baking dish. Make sure it’s evenly distributed for even baking.
Bake in a preheated oven at 350°F (175°C) for 25-35 minutes, or until heated through and bubbly. The top should be lightly golden. For a cheesier topping, sprinkle the remaining cheddar cheese over the casserole during the last 5-10 minutes of baking.
Remove from the oven and let stand for 5-10 minutes before serving.
