Ingredients

- 2 boneless, skinless chicken breasts
- 1 tbsp olive oil
- Salt and pepper to taste
- 1 tsp garlic powder
- 4 slices of thick-cut garlic bread
- 1 cup shredded mozzarella cheese
- 1/2 cup mayonnaise
- 1 tbsp Dijon mustard
- 1 tbsp chopped fresh parsley (optional)
- 1 tbsp butter (for grilling)
Instructions
- Preheat the grill or skillet.
- Season chicken breasts with olive oil, salt, pepper, and garlic powder.
- Grill the chicken for approximately 6-7 minutes on each side.
- Let the chicken rest for a few minutes before slicing it into thin strips.
- Combine mayonnaise and Dijon mustard; set aside.
- Butter one side of each slice of garlic bread.
- Toast the bread on the skillet until golden brown, about 2-3 minutes per side.
- Spread the mayo-mustard mixture on the unbuttered sides of the bread.
- Add chicken slices to one slice, sprinkle with mozzarella cheese, and close with the second slice of bread.
- Grill the sandwich for 2-3 minutes until cheese melts and bread crisps up.
- Slice the sandwich in half, sprinkle with parsley if desired, and serve warm!
Notes
For extra flavor, marinate the chicken or add jalapeños for a spicy kick.
