Description

Delightful cheesy beef taco-stuffed tortilla pockets perfect for a quick weeknight meal.


Ingredients

  • 1 lb ground beef
  • 1 packet taco seasoning mix
  • 1/2 cup water
  • 4 large flour tortillas
  • 1 1/2 cups shredded cheddar cheese
  • 1 cup shredded lettuce
  • 1 medium tomato, diced
  • 1/2 cup sour cream
  • 1/4 cup salsa
  • 1 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Heat the olive oil in a skillet over medium heat.
  2. Add the ground beef, breaking it apart as it cooks. Sauté until browned, about 5-7 minutes.
  3. Stir in the taco seasoning and water, mixing thoroughly. Simmer for 3-5 minutes.
  4. Season with salt and pepper to taste.
  5. Warm tortillas in a separate pan or microwave for 15-20 seconds.
  6. Spoon an even amount of beef mixture onto the center of each tortilla.
  7. Sprinkle shredded cheddar cheese on top.
  8. Fold the tortillas into pockets by folding in the sides and rolling them up tightly.
  9. Heat oil in a clean skillet over medium heat. Cook the pockets seam side down for 2-3 minutes until golden.
  10. Remove from the skillet and let cool for a minute before cutting in half.
  11. Serve with salsa and sour cream for dipping.

Notes

For added flavor, mix in chopped onions or bell peppers. Add jalapeños for spice. You can use pre-cooked ground beef for a quicker meal.
