Delightful cheesy beef taco-stuffed tortilla pockets perfect for a quick weeknight meal.
Ingredients

- 1 lb ground beef
- 1 packet taco seasoning mix
- 1/2 cup water
- 4 large flour tortillas
- 1 1/2 cups shredded cheddar cheese
- 1 cup shredded lettuce
- 1 medium tomato, diced
- 1/2 cup sour cream
- 1/4 cup salsa
- 1 tbsp olive oil
- Salt and pepper to taste
Instructions
- Heat the olive oil in a skillet over medium heat.
- Add the ground beef, breaking it apart as it cooks. Sauté until browned, about 5-7 minutes.
- Stir in the taco seasoning and water, mixing thoroughly. Simmer for 3-5 minutes.
- Season with salt and pepper to taste.
- Warm tortillas in a separate pan or microwave for 15-20 seconds.
- Spoon an even amount of beef mixture onto the center of each tortilla.
- Sprinkle shredded cheddar cheese on top.
- Fold the tortillas into pockets by folding in the sides and rolling them up tightly.
- Heat oil in a clean skillet over medium heat. Cook the pockets seam side down for 2-3 minutes until golden.
- Remove from the skillet and let cool for a minute before cutting in half.
- Serve with salsa and sour cream for dipping.
Notes
For added flavor, mix in chopped onions or bell peppers. Add jalapeños for spice. You can use pre-cooked ground beef for a quicker meal.
