Description

Deliciously satisfying Cheesy Beef Enchiladas rolled in corn tortillas and smothered in chili gravy, topped with melted cheddar cheese.


Ingredients

  • 1 lb. 80/20 ground beef
  • 1 T. kosher salt, divided
  • 1/2 t. black pepper
  • 1/3 c. minced white onion
  • 2 T. Texas chili powder
  • 1 t. powdered garlic
  • 1 t. onion powder
  • 1/2 t. Mexican oregano
  • 2 t. cumin
  • 1/4 c. flour
  • 2 1/2 c. beef stock
  • 1 t. fresh lemon juice
  • 12 oz. medium cheddar, freshly grated
  • 1216 fresh yellow or white corn tortillas
  • 1 c. oil for frying

Instructions

  1. Heat a skillet over medium heat.
  2. Brown the ground beef with half of the kosher salt and black pepper until evenly browned.
  3. Add the minced onion and cook for about 2 minutes until translucent.
  4. Sprinkle in the Texas chili powder, garlic powder, onion powder, Mexican oregano, and cumin, stirring until combined.
  5. Lower the heat and sprinkle in the flour, mixing it into the beef to form a roux.
  6. Gradually pour in the beef stock, bringing it to a boil before reducing heat and letting simmer for 15-20 minutes.
  7. Season with the remaining salt and stir in fresh lemon juice.
  8. Heat oil in a separate skillet for frying tortillas.
  9. Fry each tortilla lightly for 1-2 seconds on each side, then drain on paper towels.
  10. Preheat your oven to 400°F.
  11. Grease a 9×13 inch dish to prevent sticking.
  12. Place a portion of grated cheddar and minced onion on each tortilla, roll it up, and arrange seam-down in the baking dish.
  13. Pour the chili gravy generously over the assembled enchiladas.
  14. Bake for 20 minutes, until heated through and sizzling.
  15. Garnish with chopped onions or extra cheese before serving, if desired.

Notes

Consider adding diced jalapeños for a spicy kick or black beans for texture. Let your enchiladas rest for a few minutes after baking for easier serving.
