Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper or a silicone baking mat.
  2. Combine the cream cheese, powdered sugar, and vanilla extract in a small bowl. Beat until smooth; set aside.
  3. Whisk together the flour, baking soda, and salt in a medium bowl.
  4. Cream the softened butter, granulated sugar, and brown sugar in a large bowl until light and fluffy.
  5. Incorporate the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
  6. Gradually mix in the dry ingredients until just combined. Stir in the chocolate chips.
  7. Scoop about 1 tablespoon of cookie dough, flatten it slightly, place a teaspoon of cheesecake filling in the center, and cover with another tablespoon of dough. Seal the edges.
  8. Place the stuffed dough balls on the prepared baking sheet, spaced 2 inches apart.
  9. Bake for 10-12 minutes until edges are golden brown, keeping centers soft.
  10. Cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Notes
