Instructions

- Combine the cream cheese, powdered sugar, and vanilla extract in a small bowl. Beat until smooth; set aside.
- Whisk together the flour, baking soda, and salt in a medium bowl.
- Cream the softened butter, granulated sugar, and brown sugar in a large bowl until light and fluffy.
- Incorporate the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
- Gradually mix in the dry ingredients until just combined. Stir in the chocolate chips.
- Scoop about 1 tablespoon of cookie dough, flatten it slightly, place a teaspoon of cheesecake filling in the center, and cover with another tablespoon of dough. Seal the edges.
- Place the stuffed dough balls on the prepared baking sheet, spaced 2 inches apart.
- Bake for 10-12 minutes until edges are golden brown, keeping centers soft.
- Cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
