Description

A delightful twist on the classic French macaron, featuring flavors inspired by carrot cake with a creamy filling.


Ingredients

  • 100g almond flour
  • 100g powdered sugar
  • 100g granulated sugar
  • 2 large egg whites
  • 1/4 tsp cream of tartar (optional)
  • Orange and green food coloring (optional)
  • 100g cream cheese
  • 50g unsalted butter, softened
  • 100g powdered sugar
  • 1/2 tsp vanilla extract
  • 1/2 tsp cinnamon
  • 30g finely grated carrot (excess moisture squeezed out)

Instructions

  1. Preheat the oven to 300°F (150°C) and line two baking sheets with parchment paper.
  2. Sift the almond flour and powdered sugar together in a mixing bowl.
  3. Beat the egg whites until soft peaks form, then gradually add the granulated sugar until stiff peaks form.
  4. Fold the sifted dry ingredients into the egg whites carefully.
  5. Divide the batter into bowls, add food coloring if using, and pipe onto the baking sheets.
  6. Rest the macarons for 30-60 minutes until a skin forms.
  7. Bake the macarons for 15-18 minutes.
  8. Beat the cream cheese and butter until smooth, then mix in powdered sugar, vanilla, cinnamon, and finely grated carrot.
  9. Assemble the macarons by piping filling between similar sized shells.
  10. Rest the assembled macarons in the fridge for at least 24 hours before enjoying.
