Instructions
Preparation
- Preheat your oven to 350°F (175°C).
- Line a baking sheet with parchment paper.
- In a medium bowl, whisk together the flour, baking powder, baking soda, cinnamon, and salt. Set this aside.
- In a large mixing bowl, cream the softened butter, brown sugar, and granulated sugar together until light and fluffy, approximately 2-3 minutes.
- Beat in the egg and vanilla extract until fully combined.
- Gradually add the dry ingredients to the wet mix, stirring until just combined.
- Fold in the rolled oats, grated carrots, nuts, and raisins.
- Drop rounded tablespoons of cookie dough onto the prepared baking sheet, spacing them about 2 inches apart.
Baking
- Bake for 10-12 minutes or until the edges are golden brown.
- Let them cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
Frosting
- In a bowl, beat together the cream cheese and butter until smooth.
- Gradually add in the powdered sugar and vanilla extract, mixing until creamy.
- Once the cookies are cool, spread frosting on the flat side of half the cookies and top with another cookie.
Notes
Store in an airtight container in the fridge. These cookies freeze beautifully. Reheat in the microwave for a warm treat.
