- 1 1/2 cups graham cracker crumbs
- 1/4 cup sugar
- 1/2 cup unsalted butter, melted
- 16 oz cream cheese, softened
- 1 cup sugar
- 1 tsp vanilla extract
- 3 large eggs
- 1 cup sour cream
- 1 cup mini chocolate chips
- 1/2 cup caramel sauce, plus more for drizzling
Instructions
- Preheat your oven to 325°F (160°C).
- Combine graham cracker crumbs, sugar, and melted butter in a bowl. Press firmly into the bottom of a 9-inch springform pan. Bake for 8-10 minutes.
- Beat the cream cheese until smooth. Gradually add sugar and vanilla extract. Add eggs one at a time, then fold in sour cream, chocolate chips, and caramel sauce.
- Pour the mixture over the cooled crust and bake for 55-65 minutes until slightly jiggly in the center. Turn off the oven and cool with the door ajar for about an hour.
- Chill in the fridge for at least 4 hours, or overnight.
- Drizzle additional caramel sauce over the cheesecake before serving.
Notes
Use room temperature ingredients for better mixing and avoid opening the oven door during baking.
