Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup sugar
  • 1/2 cup unsalted butter, melted
  • 16 oz cream cheese, softened
  • 1 cup sugar
  • 1 tsp vanilla extract
  • 3 large eggs
  • 1 cup sour cream
  • 1 cup mini chocolate chips
  • 1/2 cup caramel sauce, plus more for drizzling

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. Combine graham cracker crumbs, sugar, and melted butter in a bowl. Press firmly into the bottom of a 9-inch springform pan. Bake for 8-10 minutes.
  3. Beat the cream cheese until smooth. Gradually add sugar and vanilla extract. Add eggs one at a time, then fold in sour cream, chocolate chips, and caramel sauce.
  4. Pour the mixture over the cooled crust and bake for 55-65 minutes until slightly jiggly in the center. Turn off the oven and cool with the door ajar for about an hour.
  5. Chill in the fridge for at least 4 hours, or overnight.
  6. Drizzle additional caramel sauce over the cheesecake before serving.
