Instructions
- Start by bringing 1 cup of water, 1/2 cup of unsalted butter, and 1/4 teaspoon of salt to a boil in a medium saucepan over medium heat.
- Once it reaches a rolling boil, remove it from the heat and stir in 1 cup of all-purpose flour until fully combined.
- Put the saucepan back on the heat for 1-2 minutes, stirring constantly until the dough becomes smooth.
- Allow the dough to cool for a few minutes.
- Incorporate the eggs one at a time, stirring well after each addition until fully incorporated.
- To add a touch of flavor, stir in 1 teaspoon of vanilla extract.
- Heat vegetable oil in a deep fryer or large pot over medium heat until it reaches 350°F (175°C).
- Prepare the cheesecake filling by beating 8 oz of softened cream cheese, 1/4 cup of granulated sugar, and 1 teaspoon of vanilla extract together until smooth.
- Using a piping bag, pipe the churro dough into circular rings directly into the hot oil.
- Fry each ring for 2-3 minutes on each side or until golden brown.
- Remove them from the oil and drain on paper towels.
- Mix 1 cup of granulated sugar with 1 tablespoon of ground cinnamon in a shallow dish and roll the churro rings in this mixture.
- Pipe the cheesecake filling into the center of each churro ring and drizzle with caramel sauce before serving.
