Description

Ingredients

  • 1 small cabbage, shredded
  • 1 1⁄2 lbs lean ground beef (or ground turkey)
  • 1 large onion, chopped
  • 1⁄2 cup chopped red bell pepper
  • 1 (15 ounce) can diced tomatoes, undrained
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/2 teaspoon sugar
  • 1 teaspoon caraway seed
  • 1 (8 ounce) can tomato sauce
  • 1 cup reduced-fat sour cream
  • 1 cup shredded Swiss cheese

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease a deep 13 x 9 baking dish.
  3. Place the shredded cabbage in the bottom of the baking dish.
  4. Brown the ground beef (or turkey) in a skillet over medium heat.
  5. Add the chopped onion and red bell pepper until tender.
  6. Drain any excess fat and return the mixture to the skillet.
  7. Stir in the diced tomatoes, salt, pepper, sugar, and caraway seeds.
  8. Spread the meat mixture evenly over the cabbage.
  9. Blend the tomato sauce and sour cream until smooth.
  10. Spread this mixture over the beef layer in the baking dish.
  11. Cover with foil and bake for 1 hour.
  12. Remove the foil, sprinkle Swiss cheese on top, and bake uncovered for an additional 15-20 minutes.

Notes

For added flavor, consider including smoked paprika or fresh herbs. Use a food processor for quick vegetable chopping.
