- 1 small cabbage, shredded
- 1 1⁄2 lbs lean ground beef (or ground turkey)
- 1 large onion, chopped
- 1⁄2 cup chopped red bell pepper
- 1 (15 ounce) can diced tomatoes, undrained

- 1/2 teaspoon pepper
- 1/2 teaspoon sugar
- 1 teaspoon caraway seed
- 1 (8 ounce) can tomato sauce
- 1 cup reduced-fat sour cream
- 1 cup shredded Swiss cheese
Instructions
- Preheat your oven to 350°F (175°C).
- Grease a deep 13 x 9 baking dish.
- Place the shredded cabbage in the bottom of the baking dish.
- Brown the ground beef (or turkey) in a skillet over medium heat.
- Add the chopped onion and red bell pepper until tender.
- Drain any excess fat and return the mixture to the skillet.
- Stir in the diced tomatoes, salt, pepper, sugar, and caraway seeds.
- Spread the meat mixture evenly over the cabbage.
- Blend the tomato sauce and sour cream until smooth.
- Spread this mixture over the beef layer in the baking dish.
- Cover with foil and bake for 1 hour.
- Remove the foil, sprinkle Swiss cheese on top, and bake uncovered for an additional 15-20 minutes.
Notes
For added flavor, consider including smoked paprika or fresh herbs. Use a food processor for quick vegetable chopping.
