- 1/2 cup creamy peanut butter

- 1 cup semi-sweet chocolate chips
- 1 tablespoon coconut or vegetable oil
Instructions
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Mix the melted butter and granulated sugar in a bowl until glossy.
- Add the eggs and vanilla extract, mixing until fully incorporated.
- Whisk together the cocoa powder, flour, salt, and baking powder in another bowl.
- Fold the dry ingredients into the wet mixture until combined.
- Drop portions of the batter onto the prepared baking sheet, spacing them 2 inches apart.
- Bake for 10-12 minutes until edges are set and tops are shiny.
- Remove from the oven and let cool completely.
- Mix the peanut butter, powdered sugar, and vanilla until smooth.
- Spread the filling between two cookies to create sandwiches.
- Melt the chocolate chips and oil in the microwave until smooth.
- Dip the tops of each sandwich in the chocolate and let set on parchment paper.
Notes
For a healthier variation, substitute half of the butter with applesauce.
