Description

Ingredients

  • 1/2 cup unsalted butter, melted
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/3 cup unsweetened cocoa powder
  • 1/2 cup all-purpose flour
  • 1/4 teaspoon salt
  • 1/4 teaspoon baking powder
  • 1/2 cup creamy peanut butter
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract (for the filling)
  • 1 cup semi-sweet chocolate chips
  • 1 tablespoon coconut or vegetable oil

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Mix the melted butter and granulated sugar in a bowl until glossy.
  3. Add the eggs and vanilla extract, mixing until fully incorporated.
  4. Whisk together the cocoa powder, flour, salt, and baking powder in another bowl.
  5. Fold the dry ingredients into the wet mixture until combined.
  6. Drop portions of the batter onto the prepared baking sheet, spacing them 2 inches apart.
  7. Bake for 10-12 minutes until edges are set and tops are shiny.
  8. Remove from the oven and let cool completely.
  9. Mix the peanut butter, powdered sugar, and vanilla until smooth.
  10. Spread the filling between two cookies to create sandwiches.
  11. Melt the chocolate chips and oil in the microwave until smooth.
  12. Dip the tops of each sandwich in the chocolate and let set on parchment paper.

Notes

For a healthier variation, substitute half of the butter with applesauce.
