Description

A comforting and creamy dish featuring cheddar cheese and fresh broccoli, perfect for quick weeknight dinners or as a tasty side.

Ingredients

Scale
  • 2 cups cooked white rice
  • 1 cup fresh broccoli florets (or frozen, thawed)
  • 1 cup shredded sharp cheddar cheese
  • 1/2 cup milk
  • 1/4 cup cream cheese, softened
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • Salt and pepper to taste
  • 1 tablespoon olive oil (optional)
  • 1/4 cup grated Parmesan cheese (optional, for topping)

Instructions

  1. In a large skillet, heat the olive oil over medium heat. Add the fresh broccoli florets and sauté for about 3-4 minutes until they are vibrant and slightly tender.
  2. In a separate mixing bowl, combine the cooked white rice, shredded cheddar cheese, milk, softened cream cheese, garlic powder, onion powder, salt, and pepper. Stir until well mixed.
  3. Transfer the rice mixture to the skillet with the sautéed broccoli and stir gently to combine evenly.
  4. Continue to cook for an additional 5-7 minutes, stirring occasionally, until the cheese is fully melted and the mixture is heated through.
  5. If desired, sprinkle grated Parmesan cheese on top during the final moments of cooking and let it melt into the dish.
  6. Remove from heat and serve warm as a hearty side or a comforting main dish.
