Description

Delightful and nutritious breakfast tarts featuring a crunchy granola crust, creamy yogurt filling, and vibrant fresh fruits.

Ingredients

Scale
  • 1 cup old-fashioned rolled oats
  • 1/4 cup finely ground nuts (pecans, walnuts, or almonds)
  • 1/4 cup finely shredded coconut
  • 1 teaspoon cinnamon
  • Pinch of salt
  • 2 tablespoons coconut oil, melted
  • 2 tablespoons pure maple syrup
  • 3/4 cup plain Greek yogurt
  • 23 tablespoons lemon curd
  • Assorted berries, kiwi, and coconut flakes for topping

Instructions

  1. Mix the dry ingredients: In a mixing bowl, combine rolled oats, finely ground nuts, shredded coconut, cinnamon, and salt. Stir until well blended.
  2. Combine with wet ingredients: Add melted coconut oil and maple syrup to the dry mixture. Stir thoroughly to coat.
  3. Prepare the oven: Preheat your oven to 350°F (175°C).
  4. Form the tart shells: Press the oat mixture firmly into tart pans.
  5. Bake the crusts: Bake in preheated oven for about 10-12 minutes, until golden brown.
  6. Cool the tarts: Remove from the oven and let cool completely.
  7. Assemble the tarts: Fill each tart shell with Greek yogurt and a dollop of lemon curd.
  8. Add the toppings: Garnish with fresh berries, sliced kiwi, and coconut flakes.
  9. Serve: Enjoy immediately or chill before serving.

Notes

For extra flavor, toast the finely ground nuts before mixing. Prepare the crust in advance and fill just before serving.
