- 1 1/2 cups graham cracker crumbs
- 5 tablespoons melted butter
- 2 tablespoons sugar
- 24 oz cream cheese, softened
- 3/4 cup sugar
- 3 large eggs
- 1/2 cup sour cream
- 1 teaspoon vanilla extract
- 1 1/2 cups fresh blueberries
- 1/2 cup all-purpose flour
- 1/4 cup brown sugar
- 4 tablespoons cold butter, cubed
Instructions
- Preheat your oven to 325°F (160°C).
- Prepare the crust by mixing graham cracker crumbs, melted butter, and 2 tablespoons of sugar. Press into the bottom of a springform pan and bake for 10 minutes.
- Make the cheesecake filling by beating cream cheese and 3/4 cup sugar until smooth. Add eggs one at a time, mix well, then stir in sour cream and vanilla extract. Gently fold in blueberries.
- Assemble the cheesecake by pouring the filling over the cooled crust.
- Prepare the crumble topping by mixing flour and brown sugar, then cutting in cold butter until it resembles coarse crumbs. Sprinkle over the cheesecake filling.
- Bake the cheesecake for 50-60 minutes until set and golden on top. Allow to cool completely.
- Chill in the refrigerator for at least 4 hours before slicing.
Notes
Use room temperature ingredients for a smoother filling and prevent cracks by baking in a water bath.
