  • 125 ml low-fat sour cream, room temperature
  • 1 teaspoon vanilla extract

Instructions

  1. Prepare the blueberry layer: In a saucepan over medium heat, combine the frozen blueberries, lemon juice, and sugar. Cook for 5-7 minutes until the mixture thickens and the blueberries burst, then remove from heat and cool.
  2. Create the biscuit base: Crush the digestive biscuits in a food processor until fine crumbs form. Mix with melted butter, press into serving glasses, and refrigerate for about 30 minutes.
  3. Prepare the cheesecake filling: Melt the white chocolate and combine it with cream cheese, sour cream, and vanilla extract in a mixing bowl until smooth.
  4. Whip the cream: Whip the cream in a separate bowl until soft peaks form. Gently fold it into the cheesecake mixture.
  5. Assemble the parfaits: Layer the cheesecake mixture over the biscuit base, followed by a layer of blueberry mixture. Repeat the layers until filled.
  6. Chill before serving: Cover and refrigerate for at least 2 hours or overnight to meld flavors.
