- 125 ml whipping cream

- 125 ml low-fat sour cream, room temperature
- 1 teaspoon vanilla extract
Instructions
- Prepare the blueberry layer: In a saucepan over medium heat, combine the frozen blueberries, lemon juice, and sugar. Cook for 5-7 minutes until the mixture thickens and the blueberries burst, then remove from heat and cool.
- Create the biscuit base: Crush the digestive biscuits in a food processor until fine crumbs form. Mix with melted butter, press into serving glasses, and refrigerate for about 30 minutes.
- Prepare the cheesecake filling: Melt the white chocolate and combine it with cream cheese, sour cream, and vanilla extract in a mixing bowl until smooth.
- Whip the cream: Whip the cream in a separate bowl until soft peaks form. Gently fold it into the cheesecake mixture.
- Assemble the parfaits: Layer the cheesecake mixture over the biscuit base, followed by a layer of blueberry mixture. Repeat the layers until filled.
- Chill before serving: Cover and refrigerate for at least 2 hours or overnight to meld flavors.
- Garnish and enjoy: Optionally garnish with fresh blueberries or whipped cream before serving.
