Description

Delightful blueberry biscuits that are flaky, buttery, and perfect for breakfast or dessert.


Ingredients

  • 2 cups All-purpose flour
  • 4 teaspoons Baking powder
  • 1/3 cup Sugar
  • 1 teaspoon Salt
  • 1 cup Cold milk
  • 5 tablespoons Cold or frozen butter
  • 3 ounces Fresh or dried blueberries
  • 1 cup Powdered sugar
  • 1/8 cup Water
  • 1 teaspoon Vanilla extract
  • 1/2 teaspoon Lemon juice

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. In a large mixing bowl, combine the flour, baking powder, sugar, and salt. Whisk well.
  3. Cut in the cold butter until the mixture resembles coarse crumbs.
  4. Gently fold in the blueberries.
  5. Gradually add the cold milk and mix until just combined.
  6. Roll out the dough to about 1-inch thickness and cut into biscuits.
  7. Place on a baking sheet lined with parchment paper.
  8. Bake for 15-18 minutes, until golden brown.
  9. For the glaze, mix powdered sugar, water, vanilla extract, and lemon juice until smooth.
  10. Drizzle the glaze over warm biscuits.

Notes

Add a pinch of cinnamon for warmth. Substitute milk with buttermilk for a tangy flavor.
