- 2 ripe bananas, mashed
- 1/2 cup unsalted butter, softened
- 3/4 cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- 2 cups all-purpose flour
- 1 tsp baking soda

- 1/2 tsp ground cinnamon
- 1/2 cup sour cream
- 1 1/2 cups fresh or frozen blueberries
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
- Whisk together the all-purpose flour, baking soda, salt, and ground cinnamon in a bowl.
- Cream the softened butter and granulated sugar together until light and fluffy. Add the eggs one at a time, then stir in the vanilla extract and mashed bananas.
- Gradually add the dry ingredients into the banana mixture, alternating with the sour cream, stirring gently until just combined.
- Fold in the blueberries without bursting them.
- Pour the batter into the prepared loaf pan, smoothing the top.
- Bake for 55-60 minutes, or until a toothpick inserted in the center comes out clean.
- Cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
Notes
For a healthier alternative, substitute unsweetened applesauce for some butter or use whole wheat flour. Avoid unripe bananas for better sweetness.
