Description

A moist and tender loaf of Blueberry Banana Bread filled with ripe bananas and juicy blueberries, perfect for any occasion.


Ingredients

  • 2 ripe bananas, mashed
  • 1/2 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 1/2 tsp ground cinnamon
  • 1/2 cup sour cream
  • 1 1/2 cups fresh or frozen blueberries

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
  2. Whisk together the all-purpose flour, baking soda, salt, and ground cinnamon in a bowl.
  3. Cream the softened butter and granulated sugar together until light and fluffy. Add the eggs one at a time, then stir in the vanilla extract and mashed bananas.
  4. Gradually add the dry ingredients into the banana mixture, alternating with the sour cream, stirring gently until just combined.
  5. Fold in the blueberries without bursting them.
  6. Pour the batter into the prepared loaf pan, smoothing the top.
  7. Bake for 55-60 minutes, or until a toothpick inserted in the center comes out clean.
  8. Cool in the pan for 10 minutes before transferring to a wire rack to cool completely.

Notes

For a healthier alternative, substitute unsweetened applesauce for some butter or use whole wheat flour. Avoid unripe bananas for better sweetness.
