Description

Ingredients

  • 1/2 cup Greek yogurt
  • 1/2 cup unsalted butter, melted
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 3/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup fresh or frozen blueberries

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
  2. Mash the ripe bananas in a large bowl until smooth.
  3. Add Greek yogurt, melted butter, granulated sugar, eggs, and vanilla extract; mix well.
  4. Whisk together flour, baking soda, baking powder, and salt in a separate bowl.
  5. Gradually stir dry ingredients into the wet mixture until just combined.
  6. Fold in the blueberries.
  7. Pour the batter into the prepared loaf pan.
  8. Bake for 60-70 minutes, or until a toothpick comes out clean.
  9. Let cool for 10 minutes in the pan, then transfer to a wire rack to cool completely.
