- 1/2 cup blackberry preserves

- Fresh mint leaves (for garnish)
Instructions
- Preheat the oven to 350°F (175°C). Grease and flour three 8-inch round cake pans.
- Mix the dry ingredients: sift together flour, sugar, cocoa powder, baking powder, baking soda, and salt in a large mixing bowl.
- Combine the wet ingredients in another bowl: whisk together buttermilk, vegetable oil, eggs, and vanilla extract.
- Add the wet ingredients to the dry mixture, mixing until just combined.
- Stir in boiling water and black food coloring gel until the batter is smooth.
- Divide the batter evenly among the prepared cake pans. Bake for 30-35 minutes, or until a toothpick comes out clean.
- Allow the cakes to cool in the pans for about 10 minutes before transferring to wire racks.
- Prepare the frosting: Beat softened butter until creamy, gradually add powdered sugar and cocoa powder, then mix in heavy cream and vanilla extract.
- Assemble the cake by spreading blackberry preserves between layers and frosting the top and sides with chocolate frosting.
- Garnish with fresh blackberries, dark chocolate shavings, and mint leaves.
