Description

A delectable dessert featuring rich chocolate, creamy whipped filling, and sweet cherry goodness.


Ingredients

  • 4 large eggs
  • 1/2 cup granulated sugar
  • 1/2 cup all-purpose flour
  • 1/4 cup cocoa powder
  • 1 tsp baking powder
  • 1/4 tsp salt
  • Powdered sugar (for dusting)
  • 1 cup heavy cream
  • 2 tbsp powdered sugar
  • 1 tsp vanilla extract
  • 1 cup cherry pie filling
  • Chocolate shavings for garnish

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Line a 10×15-inch jelly roll pan with parchment paper and lightly grease the edges.
  3. Whisk the eggs and granulated sugar together until light and fluffy, about 3-4 minutes.
  4. Sift together the flour, cocoa powder, baking powder, and salt.
  5. Fold the dry mixture into the egg mixture gently.
  6. Pour the batter into the prepared pan and spread it evenly.
  7. Bake for 10-12 minutes or until a toothpick comes out clean.
  8. Dust a clean kitchen towel with powdered sugar, then turn the cake out onto the towel.
  9. Unroll the cake, peel off the parchment paper, and roll the cake up in the towel while it’s warm. Let it cool completely.
  10. Whip the heavy cream with powdered sugar and vanilla extract until soft peaks form.
  11. Unroll the cooled cake, spread the whipped cream and cherry pie filling evenly over the top, and roll back into a spiral.
  12. Dust with powdered sugar and garnish with chocolate shavings.

Notes

Make sure to roll the cake while it’s warm to prevent cracking. Consider adding a splash of cherry juice for enhanced flavor.
