- 4 large eggs
- 1/2 cup granulated sugar
- 1/2 cup all-purpose flour
- 1/4 cup cocoa powder
- 1 tsp baking powder
- 1/4 tsp salt
- Powdered sugar (for dusting)
- 1 cup heavy cream
- 2 tbsp powdered sugar
- 1 tsp vanilla extract
- 1 cup cherry pie filling
- Chocolate shavings for garnish
Instructions
- Preheat your oven to 350°F (175°C).
- Line a 10×15-inch jelly roll pan with parchment paper and lightly grease the edges.
- Whisk the eggs and granulated sugar together until light and fluffy, about 3-4 minutes.
- Sift together the flour, cocoa powder, baking powder, and salt.
- Fold the dry mixture into the egg mixture gently.
- Pour the batter into the prepared pan and spread it evenly.
- Bake for 10-12 minutes or until a toothpick comes out clean.
- Dust a clean kitchen towel with powdered sugar, then turn the cake out onto the towel.
- Unroll the cake, peel off the parchment paper, and roll the cake up in the towel while it’s warm. Let it cool completely.
- Whip the heavy cream with powdered sugar and vanilla extract until soft peaks form.
- Unroll the cooled cake, spread the whipped cream and cherry pie filling evenly over the top, and roll back into a spiral.
- Dust with powdered sugar and garnish with chocolate shavings.
Notes
Make sure to roll the cake while it’s warm to prevent cracking. Consider adding a splash of cherry juice for enhanced flavor.
