Description

A delightful dessert that harmonizes the rich, velvety texture of cheesecake with the luscious tang of dark cherries atop a buttery graham cracker crust.


Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup sugar
  • 1/4 cup unsalted butter, melted
  • 3 cups cream cheese, softened
  • 1 cup sour cream
  • 3/4 cup granulated sugar
  • 2 teaspoons vanilla extract
  • 1 tablespoon lemon juice
  • 4 large eggs
  • 2 cups dark cherries, pitted and halved
  • 1/4 cup kirsch (or cherry juice)
  • 1/4 cup heavy whipping cream
  • 2 tablespoons powdered sugar
  • 1/4 cup dark chocolate shavings

Instructions

  1. Preheat the oven to 325°F (165°C).
  2. Combine graham cracker crumbs, sugar, and melted butter in a bowl.
  3. Press the mixture into a 9-inch springform pan and bake for 10 minutes.
  4. Beat together cream cheese, sour cream, granulated sugar, vanilla extract, and lemon juice until smooth.
  5. Add eggs one at a time, blending well after each addition.
  6. Pour the cheesecake filling over the cooled crust and bake for 50-60 minutes.
  7. Cool at room temperature then refrigerate for at least 4 hours or overnight.
  8. Cook cherries with kirsch or cherry juice for 5-7 minutes over medium heat.
  9. Whip heavy cream with powdered sugar until stiff peaks form.
  10. Spread whipped cream on cheesecake and top with cherry mixture and dark chocolate shavings.
  11. Slice and serve.

Notes

For a richer flavor, blend cocoa powder into the cheesecake filling. Use fresh cherries for better taste.
