- 1/4 cup sugar
- 1/4 cup unsalted butter, melted
- 3 cups cream cheese, softened
- 1 cup sour cream
- 3/4 cup granulated sugar

- 4 large eggs
- 2 cups dark cherries, pitted and halved
- 1/4 cup kirsch (or cherry juice)
- 1/4 cup heavy whipping cream
- 2 tablespoons powdered sugar
- 1/4 cup dark chocolate shavings
Instructions
- Preheat the oven to 325°F (165°C).
- Combine graham cracker crumbs, sugar, and melted butter in a bowl.
- Press the mixture into a 9-inch springform pan and bake for 10 minutes.
- Beat together cream cheese, sour cream, granulated sugar, vanilla extract, and lemon juice until smooth.
- Add eggs one at a time, blending well after each addition.
- Pour the cheesecake filling over the cooled crust and bake for 50-60 minutes.
- Cool at room temperature then refrigerate for at least 4 hours or overnight.
- Cook cherries with kirsch or cherry juice for 5-7 minutes over medium heat.
- Whip heavy cream with powdered sugar until stiff peaks form.
- Spread whipped cream on cheesecake and top with cherry mixture and dark chocolate shavings.
- Slice and serve.
Notes
For a richer flavor, blend cocoa powder into the cheesecake filling. Use fresh cherries for better taste.
