Description
A deliciously moist lemon loaf with a sweet glaze that captures the essence of fresh lemons.
Ingredients
Scale
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- Zest of 2 lemons
- 2 tablespoons fresh lemon juice
- 1/2 cup whole milk
- 1 cup powdered sugar
Instructions
- Preheat your oven to 350°F (175°C). Prepare a loaf pan by greasing and flouring it or lining it with parchment paper.
- Whisk together the all-purpose flour, baking powder, and salt in a medium bowl.
- Cream together the softened butter and granulated sugar until light and fluffy, about 3 minutes.
- Add the eggs to the butter-sugar mixture, one at a time, mixing well after each addition.
- Stir in the lemon zest and lemon juice.
- Gradually add the dry ingredients alternately with the whole milk, starting and ending with the dry ingredients.
- Pour the batter into your prepared loaf pan, smoothing the top.
- Bake for about 50-60 minutes, or until a toothpick inserted into the center comes out clean.
- Let the loaf cool in the pan for 10 minutes before transferring it to a wire rack.
- Combine the powdered sugar and fresh lemon juice in a small bowl to make the glaze, then drizzle it over the cooled loaf.
Notes
For added flavor, consider incorporating vanilla extract or poppy seeds into the batter.
