A deliciously moist lemon loaf with a sweet glaze that captures the essence of fresh lemons.


Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • Zest of 2 lemons
  • 2 tablespoons fresh lemon juice
  • 1/2 cup whole milk
  • 1 cup powdered sugar

Instructions

  1. Preheat your oven to 350°F (175°C). Prepare a loaf pan by greasing and flouring it or lining it with parchment paper.
  2. Whisk together the all-purpose flour, baking powder, and salt in a medium bowl.
  3. Cream together the softened butter and granulated sugar until light and fluffy, about 3 minutes.
  4. Add the eggs to the butter-sugar mixture, one at a time, mixing well after each addition.
  5. Stir in the lemon zest and lemon juice.
  6. Gradually add the dry ingredients alternately with the whole milk, starting and ending with the dry ingredients.
  7. Pour the batter into your prepared loaf pan, smoothing the top.
  8. Bake for about 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  9. Let the loaf cool in the pan for 10 minutes before transferring it to a wire rack.
  10. Combine the powdered sugar and fresh lemon juice in a small bowl to make the glaze, then drizzle it over the cooled loaf.
