Instructions
- Begin by heating a generous drizzle of oil in a large skillet over medium heat.
- While the oil heats, season the chicken pieces with salt, pepper, ground cumin, and paprika.
- Carefully place the seasoned chicken in the skillet, cooking until golden brown on all sides for about 6-8 minutes.
- Once browned, add the minced garlic to the skillet and cook for about a minute.
- Now pour the creamy coconut milk and fresh lime juice into the skillet, stirring gently to combine.
- Reduce the heat and let the mixture simmer for 20-25 minutes.
- Serve hot, ideally alongside fluffy rice.
