2 cups graham cracker crumbs
½ cup granulated sugar (for crust)
½ cup unsalted butter, melted
3 (8 ounce) packages cream cheese, softened
1 ½ cups granulated sugar (for filling)
1 teaspoon vanilla extract
4 large eggs
1 (3 ounce) package strawberry flavored gelatin
1 cup boiling water
1 (21 ounce) can strawberry pie filling
1 package vanilla wafers, crushed
Instructions
Prepare the Crust: Preheat oven to 350 degrees F (175 degrees C). In a bowl, combine graham cracker crumbs, 1/2 cup sugar and melted butter. Press onto the bottom of a 9 inch springform pan. Bake in preheated oven for 10 minutes. Remove from oven and let cool.
Make the Cheesecake Filling: In a large bowl, beat cream cheese and 1 1/2 cups sugar until smooth. Blend in vanilla, then beat in eggs one at a time. Pour filling over crust. Bake in preheated oven for 55 to 65 minutes, or until center is almost set. Let cool. Refrigerate for at least 4 hours.
Prepare the Strawberry Crunch Topping: In a large bowl, dissolve gelatin in boiling water. Stir in strawberry pie filling. Chill until slightly thickened. Fold in crushed vanilla wafers.
Assemble the Cheesecake: Spread strawberry crunch topping over cheesecake. Refrigerate until set. Gently release the cheesecake from the springform pan. Cut into slices and serve.
