Description

  • 1/2 cup fresh strawberries, pureed
  • 1 cup freeze-dried strawberries, crushed
  • 1/2 cup granola
  • 1/4 cup melted butter (for topping)
  • 2 tbsp sugar (for topping)
  • 1/2 cup fresh strawberries, chopped (for sauce)
  • 1 tbsp sugar (for sauce)
  • 1 tbsp lemon juice (for sauce)

Instructions

  1. Preheat the oven to 325°F (165°C) and line the bottom of a 9-inch springform pan with parchment paper.
  2. Prepare the crust by mixing graham cracker crumbs, melted butter, and sugar in a medium bowl. Press into the pan and bake for 8-10 minutes until set.
  3. Make the filling by beating cream cheese and granulated sugar until smooth. Add eggs one at a time, incorporating the vanilla, sour cream, and flour, then fold in pureed strawberries and heavy cream.
  4. Pour the filling onto the cooled crust, smooth the top, and bake for 45-50 minutes until the center is slightly jiggly. Cool in the oven with door ajar for an hour, then chill in the refrigerator for at least 4 hours.
  5. Prepare the topping by mixing freeze-dried strawberries, granola, melted butter, and sugar. Sprinkle over the chilled cheesecake before serving.
  6. For the optional sauce, cook chopped strawberries, sugar, and lemon juice in a saucepan over medium heat for about 5-7 minutes until thickened.
  7. Slice and serve with strawberry sauce drizzled over each piece.
