Description

Delicious muffins filled with mixed berries and a creamy cream cheese center, perfect for breakfast or a snack.


Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1/2 cup whole milk
  • 1/4 cup unsalted butter, melted
  • 1 tsp vanilla extract
  • 1/2 cup mixed berries
  • 4 oz cream cheese, softened
  • 1/4 cup powdered sugar
  • 1/2 tsp vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or grease the muffin cups.
  2. Whisk together the flour, baking powder, baking soda, salt, and sugar in a large bowl.
  3. Whisk together the egg, milk, melted butter, and vanilla extract in a separate bowl.
  4. Pour the wet ingredients into the dry ingredients and stir gently until just combined.
  5. Fold in the mixed berries carefully.
  6. Mix the softened cream cheese, powdered sugar, and vanilla extract until smooth.
  7. Spoon a small amount of muffin batter into each muffin cup, add a dollop of cream cheese mixture, and top with more muffin batter.
  8. Swirl the cream cheese filling into the muffin batter with a toothpick.
  9. Bake for 18-22 minutes until a toothpick comes out clean.
  10. Cool muffins in the pan for a few minutes before transferring to a wire rack.

Notes

For best results, don’t overmix the batter. Use fresh berries for optimal flavor.
