- 1 1/2 cups all-purpose flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/2 cup granulated sugar
- 1 large egg
- 1/2 cup whole milk
- 1/4 cup unsalted butter, melted
- 1 tsp vanilla extract
- 1/2 cup mixed berries
- 4 oz cream cheese, softened
- 1/4 cup powdered sugar
- 1/2 tsp vanilla extract
Instructions
- Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or grease the muffin cups.
- Whisk together the flour, baking powder, baking soda, salt, and sugar in a large bowl.
- Whisk together the egg, milk, melted butter, and vanilla extract in a separate bowl.
- Pour the wet ingredients into the dry ingredients and stir gently until just combined.
- Fold in the mixed berries carefully.
- Mix the softened cream cheese, powdered sugar, and vanilla extract until smooth.
- Spoon a small amount of muffin batter into each muffin cup, add a dollop of cream cheese mixture, and top with more muffin batter.
- Swirl the cream cheese filling into the muffin batter with a toothpick.
- Bake for 18-22 minutes until a toothpick comes out clean.
- Cool muffins in the pan for a few minutes before transferring to a wire rack.
Notes
For best results, don’t overmix the batter. Use fresh berries for optimal flavor.
