Ingredients

  • 1 1/2 cups creamy cottage cheese
  • 1 cup mixed berries (strawberries, blueberries, raspberries)
  • 1 cup crushed graham cracker crumbs
  • 1/4 cup melted butter
  • 2 tbsp honey
  • 2 tbsp sugar
  • 1 tsp vanilla extract
  • 2 large eggs
  • 1/4 cup Greek yogurt
  • 1 tbsp lemon juice

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Combine the graham cracker crumbs, melted butter, and 1 tbsp of sugar in a mixing bowl, stirring until it resembles wet sand.
  3. Press this mixture into the bottom of a springform pan to create the crust.
  4. Blend the cottage cheese, honey, Greek yogurt, eggs, vanilla extract, lemon juice, and remaining sugar until smooth and creamy.
  5. Pour the filling over the prepared crust and smooth the top with a spatula.
  6. Bake for 45-50 minutes until set and lightly golden on top.
  7. Cool the cheesecake at room temperature.
  8. Mix fresh berries with 1 tbsp of honey to create a topping.
  9. Chill the cheesecake in the refrigerator for 2-3 hours before serving.
