- 1 1/2 cups creamy cottage cheese
- 1 cup mixed berries (strawberries, blueberries, raspberries)
- 1 cup crushed graham cracker crumbs
- 1/4 cup melted butter
- 2 tbsp honey
- 2 tbsp sugar
- 1 tsp vanilla extract
- 2 large eggs
- 1/4 cup Greek yogurt
- 1 tbsp lemon juice
Instructions
- Preheat your oven to 350°F (175°C).
- Combine the graham cracker crumbs, melted butter, and 1 tbsp of sugar in a mixing bowl, stirring until it resembles wet sand.
- Press this mixture into the bottom of a springform pan to create the crust.
- Blend the cottage cheese, honey, Greek yogurt, eggs, vanilla extract, lemon juice, and remaining sugar until smooth and creamy.
- Pour the filling over the prepared crust and smooth the top with a spatula.
- Bake for 45-50 minutes until set and lightly golden on top.
- Cool the cheesecake at room temperature.
- Mix fresh berries with 1 tbsp of honey to create a topping.
- Chill the cheesecake in the refrigerator for 2-3 hours before serving.
