- 2 slices of bread (your choice of white, whole wheat, or sourdough)
- 1/2 lb thinly sliced roast beef
- 2 tablespoons butter, softened
- 2 slices cheddar cheese
- 1 tablespoon Dijon mustard (optional)
- 1 tablespoon mayonnaise
- 1 small onion, thinly sliced (optional)
- 1 tablespoon olive oil (for grilling)
- Salt and pepper to taste
Instructions
- Heat a skillet or griddle over medium heat.
- Butter one side of each slice of bread generously.
- Spread a layer of mayonnaise on the unbuttered side of one slice, and Dijon mustard on the other slice if desired.
- Place one slice of bread, buttered side down, into the skillet.
- Layer a slice of cheddar cheese, followed by a generous pile of roast beef, and top with another slice of cheddar.
- Top it with the second slice of bread, with the mayonnaise/mustard side facing inward.
- Cook for about 3-4 minutes on each side until the bread is golden brown and the cheese melts.
- Press down gently with a spatula to ensure even grilling.
- Remove from the skillet, let it rest for a minute, then cut in half and serve immediately.
Notes
For a gourmet twist, try adding fresh herbs or arugula after grilling. You can also use different types of cheese for variety.
