Ingredients

  • 2 pounds russet or Yukon gold potatoes, peeled and cut into 1-inch pieces
  • 3 tablespoons butter
  • 1/2 cup whole milk
  • Garlic powder, salt, and black pepper to taste
  • 1 pound ground beef
  • 2 cups beef broth, divided
  • 1 small onion, chopped
  • 2 tablespoons cornstarch

Instructions

  1. Boil the Potatoes: Fill a medium pot with water, add the salt, and bring to a boil over medium-high heat. Add the cut potatoes and boil for 7 to 8 minutes or until they can be easily pierced with a fork.
  2. Heat the Butter and Milk: While the potatoes boil, heat butter and milk in a small saucepan over medium heat, whisking occasionally, until the butter is completely melted.
  3. Drain and Mash: Drain the potatoes and return them to the pot on an unused burner to dry out. Mash the potatoes to your preferred consistency. Gradually stir in the butter-milk mixture, ensuring all liquid is incorporated. Season with garlic powder, salt, and black pepper, stirring well. Set aside.
  4. Prepare the Gravy Mixture: In a small bowl, mix cornstarch with 1/4 cup of beef broth until smooth. Set aside.
  5. Cook the Ground Beef: Heat a large skillet over medium heat. Add ground beef and cook until it is no longer pink. Drain any excess liquid.
  6. Simmer the Onions and Beef: Add the remaining 1 1/2 cups of beef broth, chopped onion, garlic powder, salt, and black pepper to the skillet. Simmer for 5 to 10 minutes until the onion becomes tender.
  7. Thicken the Gravy: Gradually whisk in the cornstarch mixture, bring to a boil, and cook for 2 more minutes until the gravy thickens.
  8. Plate the Dish: Divide the mashed potatoes among serving bowls. Top each bowl with a generous portion of the ground beef and gravy. Serve warm, with additional gravy if desired.

Consider adding herbs like thyme or rosemary for extra flavor. Substitute ground beef with turkey or chicken for a lighter version.
