  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon paprika
  • Salt and pepper to taste
  • 1 cup shredded cheddar cheese
  • 1/2 cup refried beans (optional)
  • 4 large flour tortillas
  • Vegetable oil for frying
  • Optional: Sour cream, salsa, and guacamole for serving

Instructions

  1. Prepare the filling: Heat a large skillet over medium heat. Add the ground beef and cook until browned, stirring occasionally. Drain excess fat. Add chopped onion and minced garlic, cooking until the onion is translucent.
  2. Add chili powder, cumin, paprika, salt, and pepper. Stir and cook for an additional 2 minutes. Remove from heat and let cool slightly before mixing in cheddar cheese and refried beans.
  3. Assemble the chimichangas: Lay a tortilla flat, place filling in the center, fold sides over, and roll up tightly. Repeat with remaining tortillas.
  4. Heat vegetable oil in a deep skillet over medium-high heat. Carefully add chimichangas seam-side down and fry until golden brown on all sides, about 3-4 minutes per side.
  5. Drain on paper towels and serve hot with sour cream, salsa, and guacamole.

Notes

Let the filling cool slightly before assembling to prevent sogginess. Ensure oil temperature is adequate for frying.
