Instructions
- Peel the banana and mash it in a large mixing bowl until smooth.
- Add the flour, sugar, baking powder, and salt to the bowl and stir to combine.
- Whisk together the milk, egg, melted butter, and vanilla extract in a separate bowl.
- Pour the wet ingredients into the dry mixture and stir gently until just combined.
- Heat a skillet over medium heat and lightly grease it.
- Pour about 1/4 cup of batter onto the skillet for each pancake.
- Cook until bubbles form on the surface, about 2-3 minutes, then flip and cook for another minute or two until golden brown.
- Serve warm with your favorite toppings.
Notes
Use an overripe banana for greater sweetness and creaminess. Allow the pancakes to rest after mixing for a fluffier texture.
