Description

Fluffy banana pancakes that combine the sweetness of ripe bananas with the warmth of vanilla, perfect for breakfast or brunch.


Ingredients

  • 1 ripe banana
  • 1 cup all-purpose flour
  • 1 tablespoon sugar
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup milk
  • 1 egg
  • 1 tablespoon melted butter
  • 1/2 teaspoon vanilla extract

Instructions

  1. Peel the banana and mash it in a large mixing bowl until smooth.
  2. Add the flour, sugar, baking powder, and salt to the bowl and stir to combine.
  3. Whisk together the milk, egg, melted butter, and vanilla extract in a separate bowl.
  4. Pour the wet ingredients into the dry mixture and stir gently until just combined.
  5. Heat a skillet over medium heat and lightly grease it.
  6. Pour about 1/4 cup of batter onto the skillet for each pancake.
  7. Cook until bubbles form on the surface, about 2-3 minutes, then flip and cook for another minute or two until golden brown.
