- 2 skinless, boneless chicken breast halves, cut into bite-size pieces
- 1 tablespoon tomato paste
- 1 cup plain yogurt
- 3/4 cup coconut milk
- 1/2 lemon, juiced
- 1/2 teaspoon cayenne pepper
Instructions
- Begin by heating the olive oil in a large skillet over medium heat. Allow it to warm up for a couple of minutes.
- Next, sauté the chopped onion in the heated oil until it becomes slightly browned and fragrant, which should take about 3-5 minutes.
- Add the minced garlic, curry powder, ground cinnamon, paprika, bay leaf, grated ginger, sugar, and a pinch of salt. Continue stirring for around 2 minutes to toast the spices, enhancing their flavors.
- Slowly add the bite-sized pieces of chicken to the mix, ensuring they’re coated with the spices. Stir in the tomato paste, followed by the yogurt and coconut milk, bringing everything to a gentle boil.
- Once boiling, reduce the heat to low and let the curry simmer for 20 to 25 minutes, stirring occasionally.
- After simmering, carefully remove the bay leaf and stir in the freshly squeezed lemon juice and cayenne pepper. Let it simmer for an additional 5 minutes for extra depth of flavor.
