  • 1/2 teaspoon white sugar
  • Salt to taste
  • 2 skinless, boneless chicken breast halves, cut into bite-size pieces
  • 1 tablespoon tomato paste
  • 1 cup plain yogurt
  • 3/4 cup coconut milk
  • 1/2 lemon, juiced
  • 1/2 teaspoon cayenne pepper

Instructions

  1. Begin by heating the olive oil in a large skillet over medium heat. Allow it to warm up for a couple of minutes.
  2. Next, sauté the chopped onion in the heated oil until it becomes slightly browned and fragrant, which should take about 3-5 minutes.
  3. Add the minced garlic, curry powder, ground cinnamon, paprika, bay leaf, grated ginger, sugar, and a pinch of salt. Continue stirring for around 2 minutes to toast the spices, enhancing their flavors.
  4. Slowly add the bite-sized pieces of chicken to the mix, ensuring they’re coated with the spices. Stir in the tomato paste, followed by the yogurt and coconut milk, bringing everything to a gentle boil.
  5. Once boiling, reduce the heat to low and let the curry simmer for 20 to 25 minutes, stirring occasionally.
  6. After simmering, carefully remove the bay leaf and stir in the freshly squeezed lemon juice and cayenne pepper. Let it simmer for an additional 5 minutes for extra depth of flavor.
