Description

Delightful truffles combining the sweetness of dried apricots and the nutty flavor of pistachios, perfect for festive occasions or tea parties.


Ingredients

  • 1 cup dried apricots, chopped
  • 1/2 cup shelled pistachios
  • 1/2 cup sweetened condensed milk
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon ground cardamom (optional)
  • 1/2 cup melted white chocolate
  • 1/4 cup finely chopped pistachios for coating

Instructions

  1. Place the chopped dried apricots and shelled pistachios into a food processor.
  2. Pulsing gently, create a finely chopped blend.
  3. Add the sweetened condensed milk and vanilla extract to the mixture.
  4. Sprinkle in the cardamom if using and pulse until fully incorporated.
  5. Roll the mixture into small, bite-sized balls.
  6. Place each truffle onto a parchment-lined tray.
  7. Melt the white chocolate in a double boiler or microwave.
  8. Dip each truffle into the melted chocolate.
  9. Coat the truffles in the finely chopped pistachios.
  10. Refrigerate for at least an hour to firm up.

Notes

Ensure apricots are soft; soak in warm water if too dry. Work in a clean kitchen for best results.
