- 1/2 cup shelled pistachios
- 1/2 cup sweetened condensed milk

- 1/4 teaspoon ground cardamom (optional)
- 1/2 cup melted white chocolate
- 1/4 cup finely chopped pistachios for coating
Instructions
- Place the chopped dried apricots and shelled pistachios into a food processor.
- Pulsing gently, create a finely chopped blend.
- Add the sweetened condensed milk and vanilla extract to the mixture.
- Sprinkle in the cardamom if using and pulse until fully incorporated.
- Roll the mixture into small, bite-sized balls.
- Place each truffle onto a parchment-lined tray.
- Melt the white chocolate in a double boiler or microwave.
- Dip each truffle into the melted chocolate.
- Coat the truffles in the finely chopped pistachios.
- Refrigerate for at least an hour to firm up.

Ensure apricots are soft; soak in warm water if too dry. Work in a clean kitchen for best results.
