Description

Crispy and flavorful Air Fryer Mustard Roast Potatoes, perfect as a side dish for any meal.


Ingredients

  • 1.5 lb baby gold potatoes, cut in half
  • 1 tbsp wholegrain mustard
  • 1/4 cup olive oil
  • 12 cloves of garlic, crushed
  • Salt & pepper to taste
  • Fresh parsley, chopped (optional for garnish)

Instructions

  1. Preheat your air fryer to 400 degrees F.
  2. Mix together the wholegrain mustard, olive oil, crushed garlic, salt, and pepper in a small bowl.
  3. Toss the halved baby potatoes in the mustard mixture until they are evenly coated.
  4. Place the potatoes in the air fryer basket in a single layer and cook for 10 minutes.
  5. Shake the basket to ensure even cooking, then continue to air fry for an additional 10 to 15 minutes.
  6. Season with additional salt as desired and garnish with freshly chopped parsley before serving.

Notes

For extra flavor, consider adding a dash of cayenne pepper or smoked paprika to the mustard mixture. Letting the potatoes marinate for about 30 minutes can enhance their taste.
