- 1.5 lb baby gold potatoes, cut in half
- 1 tbsp wholegrain mustard
- 1/4 cup olive oil
- 1–2 cloves of garlic, crushed
- Salt & pepper to taste
- Fresh parsley, chopped (optional for garnish)
Instructions
- Preheat your air fryer to 400 degrees F.
- Mix together the wholegrain mustard, olive oil, crushed garlic, salt, and pepper in a small bowl.
- Toss the halved baby potatoes in the mustard mixture until they are evenly coated.
- Place the potatoes in the air fryer basket in a single layer and cook for 10 minutes.
- Shake the basket to ensure even cooking, then continue to air fry for an additional 10 to 15 minutes.
- Season with additional salt as desired and garnish with freshly chopped parsley before serving.
Notes
For extra flavor, consider adding a dash of cayenne pepper or smoked paprika to the mustard mixture. Letting the potatoes marinate for about 30 minutes can enhance their taste.
