A delightful twist on the classic meatloaf, made tender and juicy with the convenience of an air fryer.

- 2/3 cup breadcrumbs
- 2/3 cup milk
- 1/2 tablespoon olive oil
- 1 small yellow onion, diced finely
- 2 pounds ground beef
- 2 large eggs
- 2 tablespoons ketchup
- 2 teaspoons Worcestershire sauce
- 2 teaspoons garlic powder
- 2 teaspoons salt
- 1 teaspoon freshly ground black pepper
- 2 teaspoons dried oregano
- 1/2 cup chopped fresh parsley
- 1/2 cup ketchup (for glaze)
- 3 tablespoons brown sugar (for glaze)
- 1 tablespoon apple cider vinegar (for glaze)
- 1 tablespoon mustard (for glaze)
Instructions
- Start your meatloaf by hydrating the breadcrumbs. Combine them with the milk in a mixing bowl and let it sit for 5-10 minutes.
- Meanwhile, sauté the diced onions in olive oil over medium heat until they turn translucent, about 2 minutes.
- Combine the hydrated breadcrumbs, sautéed onions, ground beef, eggs, ketchup, Worcestershire sauce, garlic powder, salt, pepper, oregano, and parsley in a large mixing bowl. Mix until just incorporated.
- Prepare the glaze by whisking together the ketchup, brown sugar, apple cider vinegar, and mustard in a small bowl.
- Preheat your air fryer to 350°F.
- Shape the meat mixture into two loaves.
- Place the loaves in the air fryer basket and air fry for 20 minutes. After this, glaze the meatloaf and air fry for an additional 15 minutes.
- Let the cooked meatloaves rest for 10 minutes before slicing.
Notes
For added moisture, consider using a mix of ground beef and ground turkey or chicken. You can also incorporate grated vegetables for extra nutrition.
