Description

A delightful twist on the classic meatloaf, made tender and juicy with the convenience of an air fryer.


Ingredients

  • 2/3 cup breadcrumbs
  • 2/3 cup milk
  • 1/2 tablespoon olive oil
  • 1 small yellow onion, diced finely
  • 2 pounds ground beef
  • 2 large eggs
  • 2 tablespoons ketchup
  • 2 teaspoons Worcestershire sauce
  • 2 teaspoons garlic powder
  • 2 teaspoons salt
  • 1 teaspoon freshly ground black pepper
  • 2 teaspoons dried oregano
  • 1/2 cup chopped fresh parsley
  • 1/2 cup ketchup (for glaze)
  • 3 tablespoons brown sugar (for glaze)
  • 1 tablespoon apple cider vinegar (for glaze)
  • 1 tablespoon mustard (for glaze)

Instructions

  1. Start your meatloaf by hydrating the breadcrumbs. Combine them with the milk in a mixing bowl and let it sit for 5-10 minutes.
  2. Meanwhile, sauté the diced onions in olive oil over medium heat until they turn translucent, about 2 minutes.
  3. Combine the hydrated breadcrumbs, sautéed onions, ground beef, eggs, ketchup, Worcestershire sauce, garlic powder, salt, pepper, oregano, and parsley in a large mixing bowl. Mix until just incorporated.
  4. Prepare the glaze by whisking together the ketchup, brown sugar, apple cider vinegar, and mustard in a small bowl.
  5. Preheat your air fryer to 350°F.
  6. Shape the meat mixture into two loaves.
  7. Place the loaves in the air fryer basket and air fry for 20 minutes. After this, glaze the meatloaf and air fry for an additional 15 minutes.
  8. Let the cooked meatloaves rest for 10 minutes before slicing.

Notes

For added moisture, consider using a mix of ground beef and ground turkey or chicken. You can also incorporate grated vegetables for extra nutrition.
