- 3 oz fresh spinach
- Large handful of basil
- 2 cloves garlic, crushed
- 2 tbsp lemon juice
- 1 cup coconut milk
- 3 tbsp nutritional yeast
- 1 tsp salt
- ½ tsp black pepper
- 7 oz your favorite pasta
Instructions
- Blend the fresh spinach, basil, crushed garlic, lemon juice, coconut milk, nutritional yeast, salt, and black pepper in a blender until smooth and creamy.
- Heat the blended mixture in a large pan over medium heat for 2-3 minutes until fragrant.
- Cook your pasta according to package directions in salted boiling water, then drain it.
- Combine the cooked pasta with the sauce in the pan, tossing gently to coat.
- Serve in bowls, garnished with fresh basil or chili flakes if desired.
Notes
For deeper flavor, consider sautéing garlic before blending. Customize with other herbs or veggies as you like.
