Description

Ingredients

  • 3 oz fresh spinach
  • Large handful of basil
  • 2 cloves garlic, crushed
  • 2 tbsp lemon juice
  • 1 cup coconut milk
  • 3 tbsp nutritional yeast
  • 1 tsp salt
  • ½ tsp black pepper
  • 7 oz your favorite pasta

Instructions

  1. Blend the fresh spinach, basil, crushed garlic, lemon juice, coconut milk, nutritional yeast, salt, and black pepper in a blender until smooth and creamy.
  2. Heat the blended mixture in a large pan over medium heat for 2-3 minutes until fragrant.
  3. Cook your pasta according to package directions in salted boiling water, then drain it.
  4. Combine the cooked pasta with the sauce in the pan, tossing gently to coat.
  5. Serve in bowls, garnished with fresh basil or chili flakes if desired.
